Ingredients:
For 1 serving:
• 1 large whole wheat tortilla
• 1/2 cup shredded cheese (cheddar or mozzarella)
• 1/4 cup finely chopped vegetables (e.g., bell peppers, zucchini, or spinach)
• 1 tbsp cooked chicken or turkey (optional)
• 1 tsp olive oil or butter


Instructions:

  1. Prepare Your Ingredients
    o Chop your veggies into small, bite-sized pieces. If using spinach, tear it into small bits.
  2. Assemble the Quesadilla
    o Place the tortilla on a plate or flat surface. Sprinkle half of the shredded cheese on one half of the tortilla.
    o Add the chopped veggies and cooked chicken (if using) on top of the cheese. Sprinkle the remaining cheese over the veggies.
  3. Cook the Quesadilla
    o Heat a non-stick skillet over medium heat and add the olive oil or butter.
    o Fold the tortilla in half and place it in the skillet. Cook for 2-3 minutes on each side, pressing gently with a spatula, until the tortilla is golden and crispy, and the cheese is melted.
  4. Cut and Serve
    o Remove the quesadilla from the skillet and let it cool slightly. Cut it into wedges or smaller pieces for easy handling. Serve warm.
